Chicken Enchilada Soup Recipe?
Nov 7th, 2010, 1:48pm

Does anyone have a tried and true recipe for chicken enchilada soup  (not one you just saw on the Internet and haven't tried) that they wouldn't mind sharing, please?  My Daddy tried some at Chili's and loved it and now wants a recipe.  I told him I'd ask around.  Since Mom's laid up with a broken wrist, he's doing a lot more of the cooking right now.  Thanks so much!  ~  Lisa

I've got a chicken tortilla soup recipe that we like. My neighbor brought some over when I was in the hospital, and I've made it a couple of times. It's super-easy and freezes well.

Chicken Tortilla Soup

1 roasted chicken, deboned, skinned and cut up into bite-sized pieces. (She and I just buy those already-cooked chickens at the grocery store)
4 cans chicken broth
3 cans cream of chicken soup
1 can Ro-tel diced tomatoes (mild)
1 small can diced tomatoes (oregano-basil flavor). (My neighbor uses about 3/4 of the can)
1 tsp. garlic powder
1/4 tsp. chili powder (if you like more spicy, you can use 1/2 tsp.)
6 corn tortillas cut up into small pieces.

Bring everything to a boil, except chicken and tortillas. Once boiling, add tortillas and turn down to medium heat. Cook 20 minutes, then add chicken. Cook 10 more minutes.

Serve with tortilla chips. You could also top with sour cream, if you like.

Thanks, Susan!  I'll forward this on to Daddy and continue in my quest for a chicken enchilada soup recipe.  (I'm heating up tortilla soup right now - store-bought from Tom Thumb, though; I bet yours is WAY better; can't wait to try it!)
